What is your favourite dish to cook at work and why?
Roast beef, Yorkshire puds, potatoes, veg. Always a popular dish that the residents love.
What experience do you have in the catering industry?
40 years in industry starting as a development technician for bachelor foods. Responsible for bringing cup a soup to the market place. Became a cookery tutor at a local college teaching students to complete their city and guilds exam. I the worked for a large local banking company catering in Bournemouth. After 35 years I decided it was time to wind down a bit and started cooking in residential care homes.
What are your specialties as a chef?
I love cake making and desserts.
If you had to offer one piece of advice to anyone looking to break into your industry, what would it be?
Expect to work long hours in a hot environment but have great job satisfaction and reward.
What's your regular comfort meal?
Beef lasagne followed by anything chocolate.
If you were being executed tomorrow, what would be your last meal?
Lobster Thermidor and raspberry roulade.
What is the most essential item in your kitchen?
Apart from a good cooker and dishwasher , a food mixer.
What is your favourite local restaurant to eat at?
The white Buck at burley.
